Dark Kitchen Workshop

As part of the activities of Composición Arquitectónica II at the School of Architecture of Universidad Panamericana in Aguascalientes, students of the second semester had a workshop to understand the needs in a project of a Dark Kitchen.
During the pandemic, many restaurants had to close the doors to the public. Some of them went on bankruptcy, but some others decided to take a step ahead and offer service with the help of home delivery. There was no need to have a big place for tables and they moved to apartments or warehouses to adapt them as a hidden kitchen or what is now known as dark kitchen.
The aim of the Dark Kitchen Project is the creation of a designed cooking facility with the concept of an industrial process where high efficiency is a priority, including delivery.
The Dark Kitchen Workshop was a collaboration between the Gastronomy Business School and the Architecture School with the direction of Chef Anthony Gerard Gómez from the Philippines in coordination of Dr. César Ventura and Mtro. Christian Mújica from the School of Architecture.
During the event, the architecture students were directed by the chef in order to cook by themselves and deeply understand the needs of a professional kitchen. During the workshop, all of them were aware of the ingredients, the tools, the equipment and the whole process to cook Korean Fried Chicken.
At the end of the workshop, the students showed their creation and all the team together enjoyed the result. Fingers-licking good.
